At the core of the Hunter & Barrel identity is our Barrel-Aged Cocktail program. This is an ancient technique that the team have reclaimed for the modern hunter, using time and oak to soften the sharp edges of premium spirits and introduce a depth that fresh mixing simply cannot replicate.
The Process: Patience in the Oak
Our cocktails are pre-mixed and placed into natural oak barrels for a period of weeks to months. During this time, several critical transformations occur.
- The “The Breath” of the Barrel: As temperatures and humidity fluctuate, the spirits are forced in and out of the wood’s pores, extracting natural compounds like Vanillin (for vanilla notes) and Lignin (for subtle spice).
- Softening the edge: The oak acts as a natural filter, removing unwanted harsh tones from the ethanol and rounding out the spirit for a smoother, more velvet-like mouthfeel.
- Complexity through Oxidation: Small amounts of oxygen move through the barrel, allowing the chemical compounds in the cocktails to interact and develop a more integrated, synergistic flavour profile

The barrel-aged list features reimagined classics where the base spirits – including gin, whiskey, tequila, and rum – have been allowed to rest and mature.
A Prime Example: The barrel-aged Hunter’s Mojito is not made with ordinary rum, but a custom-matured blend of Appleton Rum and Baron Samedi Spiced Rum, resulting in a drink that is rich, spiced, and complex.
