At 6HEAD, the wine program is an extension of the “Six of the Best” philosophy, curated to highlight the world’s most prestigious viticultural regions. Our Sydney and Perth venues offer two distinct journeys – one exploring the historic precision of the Old World, and the other celebrating a pioneer of the West. 

6HEAD Sydney: A Tribute to the Wines of Burgundy

Our Sydney cellar currently plays host to a curated selection from Burgundy, a region where generations of winemakers produce wines of exceptional purity and precision. Celebrating the iconic Chardonnay and Pinot Noir grapes, these wines are revered for their elegance, minerality, and profound expression of terroir.

  • The Whites: The selections reveal a signature freshness, layered with citrus and stone-fruit notes and a subtle oak complexity. Members can experience the precision through the 2024 Louis Jadot Aligote ($27 Glass / $130 Bottle) or the prestigious 202 Olivier Merlin Pouilly-Fuisse ($56 Glass / $270 Bottle) 
  • The Reds: The Burgundy reds offer a graceful structure and vibrant red-berry fruit, culminating in a refined, silky finish. A highlight of the current feature is the 2022 Philippe le Hardi Mercurey ‘Les Cheneaults’ ($45 Glass / $220 Bottle).
  • The Rare Find: For those seeking the unique Aligote varietal, the 2022 Philippe le Hardi Bouzeron ‘Les Cheneaults’ ($215 Bottle) offers a sophisticated look at one of the region’s hidden gems. 

 6HEAD Perth: A Celebration of Cape Mentelle

In Perth, Head Sommelier Camila Luzzi has selected Cape Mentelle to headline the seasonal feature. As one of the founding wineries of the Margaret River, Cape Mentelle is a pioneer of the region, recognised for creating elegant, expressive wines that truly reflect their sense of place. 

  • The Icon: The estate is long-recognised for its exceptional Cabernet Sauvignon and an unwavering commitment to quality. The Perth feature includes the 2020 Cabernet Sauvignon ($345 Bottle) and a rare 2014 1.5L Magnum ($730), both defined by purity of fruit and refined tannins.  
  • The Heritage: The 2023 ‘Heritage’ Chardonnay ($70 Glass / $340 Bottle) showcases the estate’s ability to produce world-class whites with incredible structural integrity. 
  • The Varietal Exploration: Members can also explore the vibrant 2020 Shiraz ($35 Glass / $165 Bottle) or the fresh 2024 Cape Mentelle Rose ($85 Bottle) as a lighter counterpoint to our premium meat program.
